      BONMi

      After successfully operating as a food truck and stand alone shop in the Upper West Side, BONMi has opened its doors in downtown New York. BONMi is a fast-casual Vietnamese concept, inspired by Vietnamese street cooking. Does New York really need another Vietnamese restaurant? Maybe not, but BONMi brings something new to the table.

      There’s no need to be jealous of your Facebook friends travelling in Asia, BONMi will practically transport you to the streets of Vietnam. The murals depict scenes from Vietnamese street vendors and the dangling lanterns are a must in any Asian restaurant.

      BONMi is dedicated to one dish, and one dish only. The menu revolves around the Banh Mì sandwich, a Vietnamese sandwich with influences of French cuisine. The traditional Banh Mì sandwich is created with more components than you could possibly imagine: baguette, pate, jalapeno, mayonnaise, coriander, cucumber, pickled carrots, white radish and protein. The core components are assembled in a prescribed order, leaving little room for creativity and individual taste. This is where BONMi steps in. BONMi reinterprets the classic Vietnamese sandwich by introducing new combinations, seasonal ingredients and a range of proteins. The range of proteins includes vegetarian, vegan and gluten-free options, thereby appealing to a broader audience. The menu allows you to mix and match from a list of proteins, and create a sandwich, salad or bowl – either with rice and quinoa or noodles. Think of it as celebration of one dish, which can be created in more ways than one.

      With so many different people, diets and personal preferences, this concept isn’t such a bad idea. “We are allowing our customers to use their creativity to nudge it in a direction that most excites their palates and taste preferences” states brand director Alexis Kukuka
